Mango Wood Table Scratches

Fritters Eggplant Sweet Pear




Ingredients 1 large eggplant
The juice of half a lime
2 cloves garlic, chopped fine 1 small onion, grated

2 finely chopped scallions ½
red chilli seeded and finely chopped
90 grs.
wheat flour 1 tsp salt
baking powder 2 tsp
coconut milk
1 potato boiled and pureed vegetable oil

frying Preparation
Boil eggplant until tender about 20 minutes. Cut it in half once cool and separate the flesh from the skin, mash it with a blender until pureed.
Squeeze lime on top and add the remaining ingredients, mix everything together, should be a thick dough.
Heat oil in a skillet, Drop heaping teaspoons of the mixture and fry both sides until golden brown.
Drain fritters on paper towels and serve with sauce.
